
The brick or masonry oven is a traditional cooking solution dating back to the ancient Egyptians and used throughout the world in various designs. The Pompeii oven is a classic, wood-fired design refined over centuries and is defined by its dome shape and robust masonry. Most frequently seen today as a pizza oven, a Pompeii oven cooks all foods to perfection.
Food comes out delicious because it is cooked not only by circulating hot air as with a modern gas or electric oven, but also by radiant and conductive heat from the hot dense masonry. Food is moist and tender and cooks quickly. Food can be cooked quickly at very high temperatures (~900° F) or slowly at much lower temperatures.
